Hand made from pasteurized partially skimmed cow milk from the Bruna Alpia cow and animal rennet

Straw-yellow, firm interior with fine holes and yellow natural rind

Fat content: 34 % fat, dry weight

Taste: mild, characteristic, becomes more intense with ripening
