Traditional soft cheese from the Extremadura with EU-wide Protected Designation of Origin (PDO)

Hand made from raw Merino and Entrefino sheep milk and vegetable rennet

Light yellow, creamy, almost liquid interior with hard, brown, bleached natural rind

In order to eat this cheese, the rind is cut off like a lid and the cheese is spooned out

Fat content: at least 50 % fat, dry weight

Taste: aromatic, characteristic, slightly sour

Ripening time: at least 60 days
