Traditional curdled cheese with EU-wide Protected Designation of Origin (PDO), hand made from low-fat curd (cow milk)

Light yellow, firm interior, which becomes juicier and more elastic with ripening, with thin natural rind and greenish-gray noble mold

Fat Content: under 2 % fat, dry weight

Taste: mildly sour, strong smell

Ripening time: 2 weeks
