Produced by hand in village cheese dairies in the Swiss Jura

Light yellow to ivory-colored, elastic interior with reddish brown natural rind

Fat content: at least 51 % fat, dry weight

Taste: aromatic, flowery, becomes spicier with ripening

Ripening time: 34 months on fir tree boards
