Traditional half-firm sliceable cheese from South Tyrol with EU-wide Protected Designation of Origin (PDO)

Hand made and industrially produced from natural cow milk from South Tyrolean mountain farms

Yellowish-white, elastic interior with irregular, pea-sized holes and yellowish-orange colored natural rind

Fat content: at least 50 % fat, dry weight

Taste: aromatic, spicy, strong

Ripening time: at least 62 days
