Traditional hard cheese with Protected Designation of Origin (PDO), the oldest extra hard cheese in Switzerland

Produced by hand only in the central cantons from raw cow milk

Light yellow, brittle, crumbly interior with dry, firm natural rind

Fat content: at least 45 % fat, dry weight

Taste: spicy, full-bodied, mellow

Ripening time: 1636 months
