Traditional cheese made from skim milk curd (cow milk), handmade or industrially produced

Light yellow, smeary, firm interior, refined with white mold or red smear cultures and seasoned with caraway seeds. Ripens inward

Fat content: under 10 % fat, dry weight

Taste: from mild to hearty spicy, strong smell
