Traditional hand-made soft cheese from the Indre-et-Loire county (Region Centre) with EU-wide Protected Designation of Origin (PDO)

Hand-made only by farms from which the raw goat milk comes

Ivory colored, creamy soft interior. Cheese is turned in ashes during ripening, the rind develops mold during ripening

The cylinder-shaped cheese is pierced with straw, in order to aerate the center

Fat content: 45 % fat, dry weight

Taste: mild, characteristic, with mushroom aroma

Ripening time: 15 days
