Ivory colored, creamy soft interior. Cheese is turned in ashes during ripening, the rind develops mold during ripening
The cylinder-shaped cheese is pierced with straw, in order to aerate the center
Fat content: 45 % fat, dry weight
Taste: mild, characteristic, with mushroom aroma
Ripening time: 15 days
