Traditional sliced cheese from Auvergne with EU-wide Protected Designation of Origin (PDO)

Hand-made only in 72 villages in the Puy de Dome county from raw cow milk

Ivory colored, elastic interior with laundered natural rind, on which develops gray-black noble mold during ripening

Fat content: 45 % fat, dry weight

Taste: finely aromatic, nutty

Ripening time: at least 5 weeks
