Traditional blue cheese with EU-wide Protected Designation of Origin (PDO) from the Midi-Pyrenees region

Hand-made and industrially produced from raw sheep milk. May only ripen in the natural stone cellars of Mont Combalou in the Roquefort-sur-Sulzon commune

Creamy, yellow interior streaked with blue-green mold veins, without rind

Fat content: at least 50 % fat, dry weight

Taste: piquant, distinct, intense, slightly salty

Ripening time: 5 months
