Hand-made and industrially produced from raw cow milk that comes from three regional beef races. Originally made from after-milk, the fatty milk from the second milking

Ivory colored, creamy interior with orange-yellow natural rind with red smear cultures

Fat content: 45 % fat, dry weight

Taste: mild, nutty, full-bodied, strong smell

Ripening time: 34 weeks
