This cheese has the highest number of sales in Spain

Whitish yellow, elastic interior with irregular holes and compact natural rind

Fat content: 55 % fat, dry weight

Taste: mildly aromatic, spicy, becoming more piquant with increasing ripeness

Ripening time: at least 2 months
