Traditional blue cheese from the area near Posada de Valdeon (Leon)

Hand made from cow milk and sheep and/or goat milk; sold wrapped in damp maple leaves

Creamy white interior with yellowish natural rind, which is streaked with blue mold veins

Fat content: at least 45 % fat, dry weight

Taste: salty piquant, slightly spicy

Ripening time: 6 months in natural limestone caves
