Handmade from pasteurized goat milk

During the ripening process, the cheese is, from time to time, saturated in red wines from the region, from which the rind gets its red color

White, elastic interior with thin, red, natural rind

Fat content: 45 % fat, dry weight

Taste: tart, slightly acidic, salty & aromatic

Ripening time: 3045 days
