Traditional sliceable cheese from the La Serena region (Extremadura) with EU-wide Protected Designation of Origin (PDO)

Hand made from raw Merino cheep milk and vegetable rennet

Creamy interior with waxy yellow, slightly oily rind and depressions from braided forms, in which the cheese ripens

Fat content: at least 55 % fat, dry weight

Taste: intense, full-bodied, tenderly sour, slightly bitter

Ripening time: up to 2 years
