Hand-made and industrially produced from raw cow milk

Ivory colored, soft, elastic interior with typical rectangular form and laundered natural rind

Oldest produced cheese in Normandy

Fat content: 45 % fat, dry weight

Taste: spicy & aromatic, full-bodied

Ripening time: at least 2 weeks in damp cellars
