Brand name for a sliceable cheese, which is produced on Mallorca from pasteurized cow milk

Fat content: 48 % fat, dry weight

Yellow, firm interior with irregular holes and a compact natural rind

Taste: mildly aromatic, slightly salty, becoming more piquant with increasing ripeness

Ripening time: 45 weeks (Piris semicurado), 3 months (Piris curado) or at least 6 months (Piris reserva)
