Traditional blue cheese from the Liebana region (Cantabria) with EU-wide Protected Designation of Origin (PDO)

Hand made from cow, sheep and goat milk

Yellowish white, creamy interior, which is streaked with many blue mold veins

Fat content: at least 45 % fat, dry weight

Taste: hearty, creamy, characteristic

Ripening time: 34 months in natural limestone caves
