Traditional sliced or hard cheese with EU-wide Protected Designation of Origin (PDO) from Tuscany

Hand made from sheep milk and animal rennet

Soft to half-firm, light yellow interior with golden yellow to brown natural rind

Fat content: 50 % fat, dry weight

Taste: characteristic, aromatic with a hint of sweet

Ripening time: 20 days (Pecorino tenero), 4 months (Pecorino a pasta dura)
