Traditional hard cheese with EU-wide Protected Designation of Origin (PDO) made from sheep milk and animal rennet

Hand made for hundreds of years in the area around Rome, also produced in Sardinia and southern Tuscany

Finely grained, light yellow, slightly crumbly interior with dry natural rind

Fat content: 50 % fat, dry weight

Taste: strong, slightly piquant

Ripening time: at least 8 months
