Traditional soft cheese from Piedmont, hand made and industrially produced from pasteurized cow milk

Ivory colored, soft, elastic interior, whose surface is covered in white noble mold

Fat content: 50 % fat, dry weight

Taste: tender-mild, creamy

Ripening time: at least 2 weeks on straw (ital. paglia = straw)
