Traditional semi-soft cheese from Zurich, handmade from pasteurized, biologically-produced cow milk

Yellow, elastic interior with few small holes and natural rind, which is worked during the ripening process with a mixture of herbs and the shells of green walnuts

Fat content: 53 % fat, dry weight

Taste: mildly spicy, finely aromatic, with a nutty aroma

Ripening time: 34 months
