Traditional curdled milk cheese made from skim milk curd (cow milk), handmade

Regional specialty from Nieheim (Eastern Westphalia ridge)

Light yellow, firm interior, seasoned with caraway seeds. Becomes harder over time and is thus suitable for shredding

Fat content: under 1 % fat, dry weight

Taste: spicy tart, hot, piquant, finely sour
