Traditional red smear-soft cheese from Alsace region with EU-wide Protected Designation of Origin (PDO)

Hand-made and industrially produced from pasteurized or raw cow milk

Yellow, soft, elastic interior with laundered, orange-red natural rind

Fat content: at least 45 % fat, dry weight

Taste: piquant, spicy & aromatic, slightly sour, with intense smell

Ripening time: 34 weeks
