Produced by hand in two cheese dairies in the Thurgau Canton

Yellow, elastic interior with brownish-red, smeary natural rind

Fat content: at least 55 % fat, dry weight

Taste: creamy mild, with longer ripening time full-bodied and spicy

Ripening time: 39 months
