Ivory colored, creamy interior with beige-brown natural rind with red smear and white noble mold
The ripe cheese is often heated in the oven and spooned directly from the container
Fat content: at least 45 % fat, dry weight
Taste: mild, full-bodied, with hint of sweet, strong smell
Ripening time: 3 weeks on spruce wood, encompassed in a band of spruce rind
