For 1,000 years, it is hand-made in rectangular loaves from pasteurized or raw cow milk

Smooth yellow to golden yellow, soft interior with thin natural rind and red smear cultures

Fat content: 40 % fat, dry weight

Taste: mild to strong-spicy, depending on ripeness

Ripening time: 35 weeks
