Traditional hard cheese from the La Mancha region with EU-wide Protected Designation of Origin (PDO)

Hand made and industrially produced from raw or pasteurized Manchego sheep milk

Ivory-colored to light yellow, compact, smooth interior with hard, dark natural rind

Fat content: 50 % fat, dry weight

Taste: intense, slightly salty, characteristic

Ripening time: 34 months (Manchego curado) or up to 12 months (Manchego viejo)
