Lou Bren

Half-firm sliced cheese with laundered rind from raw sheep milk. Comes from Aveyron in the Causses-Massiv (mid-Pyrenees)

White mold flecks appear on the rind as the cheese ripens.

Fat content: 50 % fat, dry weight

Taste: finely aromatic with hint of fruit

Ripening time: 2850 days
