Traditional hard cheese with Protected Designation of Origin (PDO) from western Switzerland

Produced by hand, in the Freiburg Canton near Gruyere in village cheese dairies, from silo-free raw cow milk

Golden yellow, elastic interior with cherry to nut-sized holes and thin, firm natural rind with smear

Fat content: 45 % fat, dry weight

Taste: finely aromatic, characteristic, fruity

Ripening time: at least 5 months
