Hand made from raw Pyrenean sheep milk

Offered smoked and not smoked

Light yellow, elastic interior with hard, smooth, brown natural rind

Fat content: 45 % fat, dry weight

Taste: intense, slightly spicy

Ripening time: 60 days, after which the cheese is smoked
