Regional specialty from the Harz

Light yellow, smeary, firm interior, covered in white noble mold or refined with red smear cultures and seasoned with caraway seeds. Ripens inwards

Fat content: under 1 % fat, dry weight

Taste: from mild to hearty spicy, strong smell

Ripening time: a few days to a few weeks
