Traditional curdled milk cheese made from milk curd (skim milk), handmade or industrially produced

Hessian regional specialty

Light yellow, smeary, firm interior, often refined with red smear cultures and seasoned with caraway seeds. Ripens inwards

Fat content: under 10 % fat, dry weight

Taste: from mild to hearty spicy, strong smell
