Yellow, elastic interior with small holes; rind covered with plastic, and not suitable for eating

Fat content: 4045 % fat, dry weight

Taste: fruity with a hint of sweet, mild, more distinct and spicy when ripening

Ripening time: 46 weeks (young Gouda), at least 3 months (medium aged Gouda) or 15 years (aged Gouda)
