Traditional blue cheese with EU-wide Protected Designation of Origin (PDO) from Lombardy

Hand made and industrially produced from pasteurized cow milk

Ivory-colored, creamy interior with natural, thick, reddish rind, which is streaked through to the rind with blue mold

Fat content: 48 % fat, dry weight

Taste: spicy-piquant with a discreet hint of sweet, which becomes more piquant with ripening

Ripening time: 2 months (Gorgonzola dolce), 312 months (Gorgonzola piccante)
