Traditional blue cheese with EU-wide Protected Designation of Origin (PDO) from Auvergne

Hand-made from pasteurized cow milk from the high fields of the Monts du Forez mountains

Smooth, yellow, interior streaked with blue veins, with yellowish-gray natural rind

Fat content: 50 % fat, dry weight

Taste: mild-spicy with nut and mushroom aroma

Ripening time: at least 30 days
