Traditional hard cheese with EU-wide Protected Designation of Origin (PDO) from the Marches

Hade made from sheep milk (pecorino), cow milk (vaccino) or cow (at most 80 %) and sheep milk (at least 20 %)

Half-firm, crumbly, straw-yellow or amber-colored interior with only slightly developed rind, fine cracks and ochre yellow spots on the surface

Taste depends on the milk: sheep milk cheese has an intense, slightly piquant aroma, cow milk cheese is fine and delicate with slight hints of bitter, mixed cheese has a balanced hearty taste with hints of bitter almond

Ripens for 80100 days in trass holes on the town border of Sogliano al Rubicone (Romagna)
