Brand name of a newer semi-hard cheese from the Forest of Odes, handmade from pasteurized cow milk from Spanish cows

Washed in fig liquor during the ripening process; at the end of the process, the large filling holes in the cheese are filled with fig mustard, the outside is covered in fig mustard and preserved with dried figs

Ivory-colored, smooth interior with reddish natural rind

Fat content: 45 % fat, dry weight

Taste: mild aromatic with a fruity, fresh aroma of figs

Ripening time: 34 months
