Regularly washed during the ripening with Marc de Bourgogne

Ivory colored, creamy interior with soft natural rind

The ripe cheese is spooned directly from the chip box

Fat content: 50 % fat, dry weight

Taste: spicy & aromatic, intense smell

Ripening time: 48 weeks
