Traditional hard cheese with Protected Designation of Origin (PDO), which gets its name from the Emme valley in the Bern Canton

Today, handmade in approximately 200 village cheese dairies in the region from silo-free raw cow milk

Golden yellow, elastic interior with cherry to nut-sized holes and thin, firm natural rind

Fat content: 45 % fat, dry weight

Taste: nutty, aromatic, fruity

Ripening time: 4 months (Classic), 8 months (Reserve) and 12 months (Cave ripened)
