Brand name for a hard cheese from the Castilian-La Mancha region, which is only produced from Manchego sheep milk

Offered at three ripeness levels

Finely-grained, light yellow, slightly crumbly interior with dry natural rind

Fat content: 50 % fat, dry weight

Taste: mildly aromatic, slightly sour, becoming more piquant with increasing ripeness

Ripening time: 3, 6 or 12 months
