Traditional soft cheese from pasteurized cow milk, industrially produced in the Ile-de-France and Champagne-Ardenne regions

Ivory colored, soft interior with thin natural rind and white noble mold

Fat content: at least 40 % fat, dry weight

Taste: finely nutty, mild to strong, depending on ripeness

Ripening time: at least 4 weeks
