Traditional hard cheese with EU-wide Protected Designation of Origin (PDO) from Piedmont in the Cuneo province

Hand made from partially skimmed raw cow, sheep and goat milk in only 3 mountain villages

White-yellow, elastic interior with firm, dark beige natural rind

Fat content: 34 % fat, dry weight

Taste: aromatic, characteristic

Can be eaten young or after several months of ripening
