Traditional soft cheese from Normandy with EU-wide Protected Designation of Origin (PDO), hand-made from silo-free raw cow milk

The milk may only originate from farms, where every second cow is Norman and the cows must stand on the fields for at least 6 months

Yellow, creamy interior with closed, white noble mold rind

Fat content: 45 % fat, dry weight

Taste: fresh: slightly sour, ripe: fruity, distinctive

Ripening time: at least 21 days
