Traditional blue mold cheese from the Cabrales region (Asturia) with EU-wide Protected Designation of Origin (PDO)

Handmade from raw cow, sheep and goat milk. The cheese is wrapped in damp maple leaves before sale

Ivory-colored, creamy interior with yellow natural rind, which is streaked with blue mold veins through to the edge

Fat content: 45 % fat, dry weight

Taste: intense, strong, typical, slightly salty

Ripening time: 36 months in natural limestone caves in high mountains
