Traditional soft cheese from the Ile-de-France region with EU-wide Protected Designation of Origin (PDO), hand-made from raw cow milk

Certified at the Vienna Congress in 1814 with the title king of cheese

Ivory colored, elastic interior with white noble mold rind, which changes color to red with ripening

Fat content: at least 45 % fat, dry weight

Taste: similar to hazelnuts, full of character, slightly sour, tartly aromatic

Ripening time: at least 4 weeks
