Traditional hard cheese with EU-wide Protected Designation of Origin (PDO) from Piedmont in the Cuneo province

Produced by hand from partly-skimmed raw or pasteurized cow milk, often with a small part of sheep or goat milk (under 10%) and animal rennet

Straw yellow interior with few small holes and a firm, dark beige natural rind

Fat content: 32 % fat, dry weight

Taste: aromatic, with increasing ripeness hearty-spicy

Ripening time: 612 months
