Hand-made and industrially produced from raw and/or pasteurized cow milk and animal rennet

Soft, elastic, well marbled interior with broken holes

Fat content: 50 % fat, dry weight

Taste: piquant, nutty, strong

Ripening time: at least 30 days, partially in the caves of the Massif Central
