Newer type of hard cheese from the UNESCO biosphere area of Entlebuch, handmade from biologically-produced, raw milk

Yellow, firm interior with small holes and a natural rind

Fat content: 45 % fat, dry weight

Taste: slightly seasoned, aromatic, full-bodied. Becomes malty with increasing ripeness
