Beemster Gouda

Traditional, handmade Gouda variety made from pasteurized cow milk. Named after its origin, Beemster, in the North Holland province

The natural salt content of polder grass on the grazing fields allows for the addition of less salt in production

Smooth, yellow interior with few small holes and a golden yellow, smooth rind covered in plastic, which is not suitable for consumption

Fat content: 4045 % fat, dry weight

Taste: Depending on the ripeness, fruity and mild, becoming more intense, spicy and salty with increasing ripeness

Ripening time: 16 months (mild/piquant), 1018 months (old/very old) or 26 months (X-O)
